Roasted just past the second crack, this profile brings out the coffee’s deep, full-bodied richness while preserving the subtle complexity that makes premium Sumatran coffee so unique.
Grown in the highlands of Aceh Tengah by producers Wagiman and Yasmin, this coffee is cultivated at approximately 1,450 MASL using certified organic and Fair-Trade practices. Natural fertilizers such as coffee husks and cow manure nourish the soil, ensuring long-term fertility and a farming approach rooted in stewardship rather than shortcuts.
The Vienna roast enriches the coffee’s character, bringing out flavors of dark chocolate, pipe tobacco, clove, and bittersweet cocoa, with delicate hints of dried grape and a light touch of citrus. The body is heavy and luxurious, the acidity is low and smooth, and the finish is long, savory, and lingering.
This coffee is classified as Grade 1 Triple Picked (G1 TP)—the highest quality designation for Indonesian green coffee. This means it has been carefully hand-sorted multiple times to ensure fewer than five defects per 300-gram sample. The result is exceptional consistency and a cup that remains composed even at deeper roast levels.
Processed using the traditional Giling Basah (wet-hulled) method, this coffee develops its unmistakable texture and depth. The Gayo 1 and Gayo 2 varietals, grown almost exclusively by ethnic Gayo farming communities, are believed to share lineage with Timor and Bourbon varieties. This makes them well suited to this style of roasting and prized for their resilience and richness.
