This organic Mexico Chiapas coffee is a grounded, quietly complex expression of southern Mexico’s highland terroir. Sourced from the Motozintla region of the Chiapas Highlands, this coffee is grown by smallholder farmers at elevations of 1,200–1,750 MASL, where abundant rainfall, mineral-rich soils, and dense forest canopy create ideal conditions for slow, even cherry development.
Roasted to a balanced medium, this profile is designed to highlight Chiapas’ natural sweetness and structure while preserving its gentle acidity. The roast brings warmth and depth to the cup without overshadowing the coffee’s origin character. This results in a classic, comforting, and remarkably drinkable experience.
In the cup, expect notes of milk chocolate and caramel, layered with roasted almond, raisin-like sweetness, and a soft citrus lift. The body is medium and smooth, the acidity is restrained and elegant, and the finish is clean with a lingering cocoa warmth.
This coffee is produced by various smallholder farmers across the Chiapas region, where coffee is both a cultural tradition and the primary economic driver. Traditionally washed processed, the coffee cherries are depulped and fermented before drying—an approach that enhances clarity, balance, and consistency in the final cup.
