Roasted dark and carefully developed just into second crack, this profile is designed to emphasize body, sweetness, and richness while maintaining balance and clarity. The roast deepens the coffee’s natural chocolate character without overwhelming its structure, resulting in a cup that is indulgent yet composed.
In the cup, expect notes of dark chocolate and bittersweet cocoa, layered with molasses-like caramel sweetness and toasted almond. The body is full and velvety, the acidity is low and smooth, and the finish is long, warming, and luxuriously rich.
This coffee is produced by multiple smallholder farmers throughout Comayagua, including Alfonso Ramos, who has been cultivating coffee since the 1960s.
