Sourced from approximately 600 smallholder farmers surrounding the village of Bombe, this coffee is a stunning expression of Ethiopian coffee, bursting with tropical fruit, blackberry, plum, honey, grapefruit, and rose. Bright, juicy, and intensely aromatic, this is a coffee for anyone who loves discovering just how fruity coffee can be.

 

Our light roast allows the beautiful fruit character of this natural-process coffee to take center stage. Tropical fruit and ripe blackberry lead the way, followed by juicy plum and a honey-like sweetness. Grapefruit brings a lively spark, while delicate rose adds an elegant floral finish. With a medium body and medium acidity, the cup is vibrant and juicy while remaining structured and sweet.

 

Ayla Bombe is produced from Ethiopian variety 74158 and grown in the highlands of Bensa, Sidama, at elevations ranging from 1,950 to 2,150 meters above sea level. The high elevation, cool mountain temperatures, abundant rainfall, and rich soils allow the coffee cherries to mature slowly, encouraging the development of concentrated sugars and the intense fruit and floral characteristics for which exceptional Ethiopian coffees are known.

 

This lot is processed using an innovative natural method designed to enhance sweetness and fruit intensity. The cherries are spread in thin layers on raised drying beds, where strong airflow and reduced direct sunlight allow for a slow, controlled drying period of approximately 28 days. This careful drying process helps preserve the coffee's remarkable fruit character, sweetness, and clarity.

 

The Ayla Washing Station is located near the Bonora River and the slopes of Durto Gerbamo Mountain, within one of Sidama's most respected coffee-growing areas. The surrounding highlands are home to generations of smallholder farmers cultivating coffee within a diverse, shade-grown agricultural landscape. The combination of altitude, climate, terroir, and careful post-harvest processing gives this coffee its distinctive combination of colorful fruit, floral elegance, and sweetness.

 

Ethiopia holds a special place in coffee history as the birthplace of Coffea arabica and one of the world's most important centers of coffee diversity. Ethiopian coffees are celebrated for their remarkable range of floral, fruit, citrus, and sweet characteristics, shaped by the country's unique varieties, growing conditions, and generations of coffee-growing tradition. Ayla Bombe offers a vivid expression of that heritage, with a cup that is unmistakably Ethiopian and wonderfully fruit-forward.

 

All of our coffee is roasted in small batches to highlight the unique characteristics of its origin. This light roast was developed specifically to preserve the extraordinary fruit and floral character of this lot. Rather than roasting away its natural personality, we allow the coffee's tropical fruit, blackberry, plum, honey, grapefruit, and rose notes to shine. The result is lively, juicy, and aromatic with remarkable sweetness and complexity.
