Our Mexican Chiapas Half-Caf is a thoughtfully composed 50/50 blend of two expressions from the same origin: a smooth, medium-roasted Chiapas paired with its dark-roasted, Swiss Water® decaffeinated counterpart. The result is a cup that delivers depth, comfort, and clarity, with half the caffeine and none of the compromise.
Visually, the blend reveals a striking natural contrast: lighter medium-roasted beans alongside their darker decaf partners. This classic “black and tan” effect reflects the care taken in roasting each component separately before blending. It’s not just beautiful; it’s purposeful.
Expect a harmonious profile of semi-sweet chocolate, toasted caramel, and soft praline, supported by a rounded body and gentle acidity. The medium roast contributes balance and structure, while the darker decaf layer adds warmth and richness, creating a finish that’s smooth and satisfying.
Both components are organically grown in the Chiapas Highlands of Mexico, where high elevations, volcanic soil, and generations of smallholder farmers produce coffees known for their reliability and quiet elegance. The decaffeinated portion is processed using the Swiss Water® Method. This is a 100% chemical-free process that preserves flavor while removing 99.9% of caffeine.
