How Fresh is Too Fresh?

Freshly Roasted Doesn't Always Mean Ready to Brew
There is something special about freshly roasted coffee. The aroma when the beans come out of the roaster, the sound of cooling coffee beans, and the first look at a beautiful batch that has just finished its transformation from green coffee to roasted coffee. It is tempting to think that the sooner we brew it, the better it must be, but this is not necessarily the case.
Freshly roasted coffee still has some work to do before it is ready to give you its peak flavor. One of the most important things happening inside the bean after roasting is something you cannot see: degassing. Understanding degassing can change the way you think about the phrase "freshly roasted."

What Is Degassing?
During roasting, chemical reactions create gases, including carbon dioxide. Some of that gas escapes during roasting, while a significant amount becomes trapped inside the porous structure of the roasted bean. After roasting, the gas slowly works its way out of the coffee, This process is called degassing or off-gassing.
Research from the Zurich University of Applied Sciences found that carbon dioxide release is closely connected to coffee freshness, shelf life, extraction and crema formation. It also showed that degassing continues for weeks, although the rate is much faster earlier in the process.
The Specialty Coffee Association (SCA) explains the same process in its Coffee Freshness research. CO₂ is released rapidly during the first several weeks after roasting, and grinding accelerates that release dramatically. When you open a bag of freshly roasted coffee and see it puffing up, or watch your grounds bubble aggressively during a pour-over bloom, you are seeing degassing in action.
Why Does Coffee Need to Rest?
CO₂ is not inherently bad. In fact, it plays an important role in coffee. However, too much of it during brewing can interfere with the way water interacts with the coffee grounds.
This is particularly noticeable with filter coffee. Very fresh grounds can release so much gas that the coffee bed expands, and water isn't effectively able to make consistent contact with the particles.
Research has shown that fresher coffee produces greater crema volume, which is one reason a very fresh espresso shot can look impressive even when the flavor is not yet where you want it to be. However, excessive residual gas produces an unusually large amount of crema and can affect the flow and extraction of the espresso. This is why freshly roasted and ready to brew are not necessarily the same thing.
Roast Level Makes a Difference
Light, medium and dark roasts do not degas identically. A peer-reviewed study published in the Journal of Agricultural and Food Chemistry measured degassing in light, medium and dark roasted Arabica coffee using multiple roasting speeds.
The darker coffees released substantially more gas than the lighter coffees. In the study, the total measured gas loss increased consistently as roast degree increased. The researchers also found that shorter, faster roasting increased the rate of degassing for medium and dark roasts.
This is where the common statement that "dark roasts degas faster" comes from, but there is an important distinction. Dark roasting produces more residual gas and generally results in higher degassing rates. That does not mean every dark roast will reach its ideal brewing point sooner than every light roast. Roast speed, bean structure, origin, processing method and cooling can all influence how a coffee behaves after roasting. Instead of thinking about degassing as a simple light-versus-dark equation, think of it as another part of the roast profile.
How Long Should You Wait?
There is no magic number of days. Every coffee is different, and the best resting period depends on the roast profile and how you intend to brew it. A light-roasted Ethiopian natural may behave differently from a light-roasted washed Colombian. A medium roast intended for espresso may need more rest than the same coffee brewed as a pour-over. The best way to find out is to taste it.
As a practical starting point, we recommend testing:

Espresso
Espresso tends to be the least forgiving brewing method when coffee is extremely fresh.
Pressure forces water through a compact bed of finely ground coffee, making the effects of trapped CO₂ particularly noticeable.
Very fresh coffee can produce excessive crema, unpredictable flow, difficulty dialing-in, and even sharp or uneven flavors.
This is one reason espresso roasters often allow their coffee to rest longer before serving it.
Medium and darker espresso roasts may become enjoyable after only a few days, while lighter espresso roasts can benefit from considerably more time.
If your espresso is behaving strangely, don't immediately blame your grind setting. Always check the roast date first.
Filter Coffee
Pour-over brewing gives us the most visible demonstration of degassing.
That first pour is called the bloom for a reason. Water wakes up the coffee, and the trapped CO₂ begins escaping. A very fresh coffee can produce a dramatic bloom with lots of bubbling and expansion. Although that can be beautiful, it does not necessarily mean the coffee will taste its best.
For many specialty light and medium roasts, starting your brewing tests about a week after roasting is reasonable. Taste the same coffee again at 10, 14 and 21 days.
You may discover that the acidity becomes more balanced, sweetness becomes easier to identify, and the overall extraction becomes more predictable as the coffee settles.
Immersion Brewing
French press and AeroPress are generally more forgiving because the brewing process is less dependent on water flowing evenly through a compact coffee bed. However, this does not make degassing irrelevant. Very fresh coffee can still release enough CO₂ to influence extraction and flavor, but immersion brewing gives you a little more room to work with it.
For medium roasts, 5 to 10 days is a reasonable place to begin testing. Light roasts may benefit from additional rest.
What About Cold Brew?
Cold brew is a bit different because the extraction takes place at a much lower temperature and over a much longer period, it does not behave like espresso or pour-over. For cold brew, we should focus less on a specific number of days and more on how the coffee performs in the actual recipe.
A coffee that tastes beautifully bright as a pour-over may not be the coffee you want for cold brew. Likewise, a coffee that seems slightly ordinary as a hot brew can become rich and chocolatey when extracted cold. The brewing method can make all the difference.
Don't Confuse Degassing With Staling
This is one of the most important facts to understand. Degassing is the release of gases from the roasted coffee, whereas staling involves broader chemical changes that eventually diminish desirable aromas and flavors. These happen at the same time, but they are not the same process.
As CO₂ leaves the coffee, oxygen can increasingly interact with the bean. Oxygen exposure contributes to oxidation of coffee's aroma compounds and oils, which eventually leads to stale or rancid characteristics. The SCA identifies oxygen exposure as an important factor in coffee freshness and storage. This is why proper storage makes all the difference.
Keep your coffee in an airtight container and away from heat, moisture, and direct sunlight. We also recommend you don't grind it until right you're ready to brew it. And if your coffee bag has a one-way valve, as ours do, this allows gases to escape while helping prevent outside air from entering the package.
Grind Fresh, Brew Fresh
We absolutely recommend buying whole bean coffee. Grinding dramatically accelerates gas release. The SCA notes that CO₂ that takes weeks to escape from whole beans can be lost much more rapidly once the coffee is ground. The research from Smrke and colleagues also demonstrated substantially faster gas release from ground coffee compared with whole beans. There is a big difference between coffee roasted seven days ago and ground immediately before brewing and coffee roasted seven days ago which was also ground seven days ago. The first is rested coffee, the second can be stale coffee.
The Caffeinatrix Approach
At Caffeinatrix, we roast in small batches because we want to pay attention to what each coffee is doing. We don't believe every coffee should be roasted the same way, and we don't believe every coffee should be brewed on the same schedule.
Coffee needs time to settle after roasting. How much time depends on the coffee, the roast profile and what you are trying to get from it in the cup. Keep this in mind the next time someone tells you that coffee is best the day it is roasted. Remember, freshness isn't a race.
The goal isn't to drink coffee as quickly as possible after it leaves the roaster, the goal is to let the coffee become what it was roasted to be. Sometimes that means opening the bag immediately because you simply cannot wait, and sometimes the best thing you can do with a beautiful bag of freshly roasted coffee is leave it alone for a few days and let it become the most beautiful version of itself.
